Steak with Broccoli

Servings: 3
Ingredients:
1/2 small thinly sliced red onion
3 tbsp of red wine vinegar
1 pinch of kosher salt
1 Pinch of freshly ground black pepper
5 tbsp of divided extra-virgin olive oil
1 and 1/4 lb. of cut skirt steak
1 tsp of ground coriander
1 thinly sliced small head of broccoli
4 c. of Mache
1/4 Cup roasted sunflower seeds
4 oz., 1/4 cup shaved ricotta
Directions:

  1. Combine the vinegar and about 1/2 tsp. salt in a bowl. Then set it aside
  2. Meanwhile, press the function sauté of your Instant pot and heat about 1
    tbsp. in it; then season the steak with the coriander, the salt, and the
    pepper.
  3. Lock the lid of your Instant Pot
  4. Cook for about 5 minutes at a temperature of 365°F
  5. Add the broccoli, the Mache, the sunflower seeds, and the remaining 4
    tbsps. oil to the onions and toss to combine it.
  6. Season the steak with 1 pinch of salt and the pepper.
  7. Storage, freeze, thaw and reheat guideline:
  8. To store your dinner, divide it between 3 containers; then put the
    containers in the refrigerator at a temperature of about 40°F. When you
    are ready to serve your dinner, remove the containers from the refrigerator
    and microwave it for about 4 minutes
