1 pound chicken fillets
3 bell peppers, quartered lengthwise
1/3 cup Romano cheese
2 teaspoons olive oil
1 garlic clove, minced
Kosher salt and ground black pepper, to taste
1/3 cup crushed pork rinds
- Start by preheating your oven to 410 degrees F.
- Mix the crushed pork rinds, Romano cheese, olive oil and minced
garlic. Dredge the chicken into this mixture.
- Place the chicken in a lightly greased baking dish. Season with salt
and black pepper to taste.
- Scatter the peppers around the chicken and bake in the preheated oven
for 20 to 25 minutes or until thoroughly cooked.
